Pasta all’Arrabbiata

Pasta all’Arrabbiata 0

An uncomplicated recipe that packs a delicious and fiery punch!

Ingredients

  •    50g  black rice noodle
  •    ⅓ cup tomato paste
  •    ½ cup chopped tomatoes (roasted tomatoes are a great option!)
  •    2 garlic cloves, minced
  •    8 ml olive oil
  •    1 tbsp red pepper flakes
  •    Freshly grated parmesan cheese, for serving
  •    Ground black pepper, salt and cayenne pepper to taste.

Directions

  1. To make sauce: In a saucepan over medium heat, sauté garlic in olive oil until fragrant. Add red chili flakes and tomato paste and reduce the heat to low, stirring until the paste is reduced, about 4 minutes. Add chopped tomatoes, salt and pepper, and simmer.
  2. Cook the pasta for about 7 minutes or until al dente. Stir pasta often to prevent the noodles from sticking. Drain, rinse with cold water, and drain.
  3. Combine the pasta and the sauce and mix thoroughly. Top with a sprinkle of parmesan cheese.
  4. Serve and enjoy!

Pasta alla Vodka

A simple and quick, delicious pasta dinner!

Ingredients

  •    50g noodles (white rice noodles with chia are recommended!)
  •    1/2 cup heavy cream
  •    3 fresh tomatoes, roughly chopped
  •    10 ml Vodka
  •    2 tbsp tomato paste
  •    1 garlic clove, minced
  •    8 ml olive oil
  •    10 ml chicken stock (optional)
  •    Ground black pepper and salt to taste

Directions

  1. Cook the pasta for about 7 minutes or until al dente. Be sure to stir the pasta often to prevent the noodles from sticking. Drain, rinse with cold water and drain.
  2. In a skillet, heat the olive oil and sauté the garlic until golden brown.
  3. Add vodka and cook until it reduces (most simply, until it no longer smells strongly of vodka!) Add the chicken stock if using, cream, tomato paste, salt, and black pepper.
  4. Add the pasta to the pan with the sauce and mix until it is coated.
  5. Add fresh tomatoes and simmer until the pasta is ready.
  6. Serve and enjoy!

Shrimp Fra Diavolo

A quick and easy recipe that is sure to impress your guests!

Ingredients

  •    50g  rice noodle (red rice noodles are recommended!)
  •    13 cup tomato paste
  •    12 cup chopped tomatoes
  •    4 shrimp
  •    2 cloves of garlic, minced
  •    1 tbsp finely chopped fresh oregano leaves
  •    8 ml olive oil
  •    1-2 tsp. red pepper flakes
  •    Ground black pepper and salt to taste

Directions

  1. Cook the pasta about 7 minutes or until it’s al dente. Stir pasta often to prevent the noodles from sticking. Drain, rinse with cold water and drain.
  2. In a frying pan, saute the garlic, red pepper flakes, and shrimp over medium heat with olive oil. When the shrimps are near opaque, add the tomato paste, chopped tomatoes, fresh oregano leaves, and ground black pepper and salt to taste.
  3. Add pasta and stir.
  4. Serve the pasta and sprinkle with a grating of parmesan.
  5. Enjoy!

Pasta alle Vongole

This briny Venetian classic is great for seafood lovers – light, yet flavorful!

Ingredients

  •    50g  brown rice noodle
  •    1 cup scrubbed fresh Manila clams, cockles, or littlenecks
  •    ½ cup chopped tomatoes
  •    1 garlic clove, thinly sliced
  •    8 ml olive oil
  •    ¼ cup white wine
  •    2 tbsp roughly chopped fresh, flat-leaf parsley
  •    Ground black pepper and salt to taste

Directions

  1. Cook the pasta about 7 minutes or until al dente. Stir pasta often to prevent the noodles from sticking. Drain, rinse with cold water and drain.
  2. In a frying pan, sauté the garlic over high heat with olive oil. Add white wine and reduce, about 2 minutes. Add the clams and cover the skillet until the clams have opened up, about 3-6 minutes depending on their size. Add ground black pepper and salt to taste and gently toss the pasta into the sauce.
  3. Garnish with chopped parsley.
  4. Serve and enjoy!

Pasta Bolognese

This classic, tasty dish is a guaranteed hit with the family!

Ingredients

  • 50g rice noodle (brown rice noodles are recommended!)
  • 1/2 cup tomato paste
  • 30g minced beef
  • 1 garlic clove, minced
  • 5 basil leaves, torn into fingertip-size pieces
  • 8 ml olive oil
  • 15 ml chicken stock
  • ½ cup of dry white wine
  • 3 fresh tomatoes, chopped
  • 2 tbsp Parmesan cheese flakes
  • Ground black pepper and salt to taste.

Directions

  1. To make sauce: Place a large, heavy-based saucepan on medium heat. Add olive oil, tomatoes, tomato paste, chicken stock, white wine, and chopped beef. Add about half of the basil leaves when the beef is cooked through. Allow to simmer for about 30 minutes.
  2.  To make pasta: Cook the pasta for about 7 minutes or until al dente. Stir pasta often to prevent the noodles from sticking. Drain, cover with cold water. Drain.
  3. In a skillet, sauté the garlic over  medium heat with olive oil and cook until   golden brown and add the rest of the basil leaves.
  4. Add pasta to the sauce until thoroughly mixed. Aadd ground black pepper and salt to taste and mix until it is all coated over the pasta.
  5. Serve the pasta and sprinkle with a grating of Parmesan.
  6. Enjoy!

Pasta al Pesto

A great weeknight supper, this quick pesto recipe is a delicious, and convenient, meal – and it makes for fantastic leftovers!

Ingredients

  • 50g rice noodles (brown rice noodles are recommended!)
  • 3/4 cup basil leaves
  • 5g pine nuts
  • 2 garlic cloves, finely minced
  • 25 ml olive oil
  • 1 tbsp grated Parmesan cheese
  • 3 grilled scallops (optional)
  • Ground black pepper and salt to taste

Directions

  1. To make pesto sauce: blanche basil leaves in boiling water for around 1 minute. In a food processor or with a mortar and pestle, combine the minced garlic, pine nuts, parmesan while gradually adding olive oil. Season with salt and pepper to taste.
  2. To make pasta: Cook the pasta for about 7 minutes or until al dente. Stir pasta often to prevent the noodles from sticking. Drain, and rinse with cold water. Drain.
  3. Add pasta and stir to combine with the sauce.
  4. Serve the pasta with grilled scallop, if using, and sprinkle with a grating of parmesan.
  5. Enjoy!
