Perfect Earth's Vindaloo Pasta

Perfect Earth's Vindaloo Pasta 0

Perfect Earth’s Vindaloo Pasta is delicious and vegan on its own but goes well with any protein if you prefer.

Ingredients Serves Four

  • 1 Pack Perfect Earth Rice Pasta – Brown Rice (7.9oz or 225g)
  • 5 tbsp Chopped Onion (75g)
  • 5 tbsp Chopped Ginger (75g)
  • 3 Cloves
  • 5 tbsp Chopped Garlic (75g)
  • 3 tbsp Cumin Powder (45g)
  • 2 tbsp Masala Powder (30g)
  • 3 tbsp Curry Vindaloo (45g)
  • 1 Boiled Potato
  • 1 ½ tbsp Mustard (22g)
  • 3 tbsp Chopped Coriander (45g)
  • 1 ¼ Cups Coconut Milk (320ml)
  • 5 tbsp Oil (75g)
  • 3 tbsp Sugar (30g)
  • 2 ½ tsp Salt (30g)

Directions

  1. Bring 4 cups of water to a boil. Add the Perfect Earth Rice Pasta – Brown Rice to the boiling water. Stir gently and cook for 8-9 minutes or until you reach your desired texture.
  2. Rinse the pasta in cool water and drain. Set it aside in a large serving bowl. 
  3. Boil the potato and cut it into cubes.
  4. Put the oil in a pan on medium heat, add chopped onions, garlic, cloves and curry paste. Then stir fry.
  5. Add ginger, salt and mustard and continue to stir fry.
  6. Add the cumin powder, masala powder, potatoes and coconut milk togetherwith the Pasta and stir fry all together.
  7. Season with salt and sugar and then serve, sprinkling coriander on top.

Perfect Earth’s Black Magic Pasta is delicious and vegan on its own but goes well with any protein if you prefer.

Ingredients Serves Four

  • 225 g Perfect Earth Rice Pasta – Black Rice
  • 30 g Fresh Scallions
  • 35 g Fresh Bean Sprouts
  • 30 g Fresh Coriander
  • 30 g Fried Onions
  • 40 g Kale Sliced
  • 1 1/2 tbsp Liquid Aminos or Soy Sauce
  • 3 tbsp Chilli Sauce
  • 25 g Chilli Flakes
  • 3 Red Thai Goat Pepper
  • 2 tbsp Salt
  • 5 tbsp Oil

Directions

  1. Bring 4 cups of water to a boil. Add the Perfect Earth Rice Pasta – Black Rice to the boiling water. Stir gently and cook for 8-9 minutes or until you reach your desired texture.
  2. Rinse the pasta in cool water and drain. Set it aside in a large serving bowl. 
  3. Warm a pan to medium heat and add the oil. Add the pasta to the pan and stir.
  4. Add the bean sprouts and kale and stir together.
  5. Mix the Aminos (or Soy Sauce), chili sauce and salt in a small bowl and then add to the pan and stir all together.
  6. Serve onto plates and decorate with scallions, coriander leaves, fried onion and chili flakes.

This healthy vegan pasta salad recipe was created by our Chef Prempak!

Ingredients Serves Four

  • 225 g Perfect Earth Chia Pasta - Brown Rice
  • 4 1/2 tbsp Lemon Juice
  • 5 tsp Olive Oil 
  • 40 g Cherry Tomatoes 
  • 40 g Chopped Garlic
  • 2 1/2 tsp Salt
  • 35 g Sliced Cucumbers 
  • 35 g Chopped Peanuts 
  • 25 g Coriander, Chopped
  • Fresh Lime, Cut into 12 Wedges
  • 60 ml Water

Directions

  1. Bring 4 cups water to a boil. Add Perfect Earth Chia Pasta - Brown Rice to the boiling water. Stir Gently and cook for 8-9 minutes or until you reach your desired texture.
  2. Rinse pasta in cool water and drain. Set aside in a large serving bowl. 
  3. Mix the cherry tomatoes, cucumbers, chopped garlic and salt together and add to the pasta bowl. Then add the water and mix all the ingredients.
  4. Make the dressing by combining olive oil and lemon juice, mix well.
  5. Divide the mixture into 4 bowls and drizzle the dressing on top. Sprinkle bowls with chopped chilli, peanuts and coriander. Add 2 lime wedges. Serve immediately.

Ingredients Serves Four

  • 225 g Perfect Earth Rice Pasta - Pad Thai
  • 45 g Canned Corn
  • 30 g Sliced Black Olives
  • 2 Fresh Limes
  • 30 g Italian Basil
  • 30 g Garlic
  • 60 g Sliced Almonds
  • 25 g Parmesan Cheese
  • 3 tsp Salt
  • 1 1/2 tsp Pepper
  • 5 tsp Oil

 

Directions

  1. Bring 4 cups of water to a boil. Add the Perfect Earth Rice Pasta – Pad Thai to the boiling water. Stir gently and cook for 8-9 minutes or until you reach your desired texture.
  2. Rinse the pasta in cool water and drain. Set it aside in a large serving bowl. 
  3. Add the oil to a pan and saute the basil, almonds and garlic until the almonds and garlic turn light brown. Then set aside the basil, almonds and garlic in a small bowl.
  4. Set the pan on medium heat and add the pasta, the basil, almond and garlic mix, and add the corn and olives. (If you have the time and access to good fresh corn, this will make the dish even better). Mix all the ingredients and stir.
  5. Put the mixture into the serving bowl, add the salt and pepper, squeeze the limes and mix all the ingredients well.
  6. Serve onto plates and sprinkle parmesan cheese on top.

Blacksa (Laksa), the epic Singapore spicy coconut noodle soup, is a must-try at least once in your life!

Ingredients Serves Four

  • 225g Perfect Earth Rice Pasta - Black Rice
  • 175g Chicken Breast (boiled and shredded)
  • 1 Egg (boiled and cut in half)
  • 6 Shrimp
  • 4 tbsp Oil
  • 20g Yellow Curry Paste
  • 300g Coconut Milk
  • 15g Ginger, Grated
  • 3 tsp Turmeric Power
  • 2 1/2 tsp Salt
  • 2 tbsp Sugar
  • 30g Chives, Chopped
  • 3 Red Chili, Cut Into Strips
  • 30g Bean Sprouts
  • 25g Coriander, Chopped
  • 30g Fried Tofu Puffs

    Directions

    1. Gather pre-cooked chicken, egg and shrimp.
    2. Bring 4 cups water to a boil. Add Perfect Earth Rice Pasta - Black Rice to the boiling water. Stir Gently and cook for 8-9 minutes or until you reach desired texture.
    3. Rinse pasta in cool water and drain. Set aside.
    4. Heat oil in a large pan over medium heat. Add curry and stir until aromatic. Pour in coconut milk and bring to a boil, then add ginger and turmeric powder. Add salt and sugar.
    5. Next add chilis reserving some for topping (don’t add any if you don’t like spicy) and let simmer for a few minutes until everything combines well.
    6. Remove from heat and add pasta and shrimp to pan and stir. Add Tofu Puffs.
    7. Divide mixture into 4 bowls.
    8. Top with egg, bean sprouts, chicken, chives, coriander and chili peppers.
    9. Serve immediately.
    Pasta all’Arrabbiata

    An uncomplicated recipe that packs a delicious and fiery punch!

    Ingredients

    •    50g  black rice noodle
    •    ⅓ cup tomato paste
    •    ½ cup chopped tomatoes (roasted tomatoes are a great option!)
    •    2 garlic cloves, minced
    •    8 ml olive oil
    •    1 tbsp red pepper flakes
    •    Freshly grated parmesan cheese, for serving
    •    Ground black pepper, salt and cayenne pepper to taste.

    Directions

    1. To make sauce: In a saucepan over medium heat, sauté garlic in olive oil until fragrant. Add red chili flakes and tomato paste and reduce the heat to low, stirring until the paste is reduced, about 4 minutes. Add chopped tomatoes, salt and pepper, and simmer.
    2. Cook the pasta for about 7 minutes or until al dente. Stir pasta often to prevent the noodles from sticking. Drain, rinse with cold water, and drain.
    3. Combine the pasta and the sauce and mix thoroughly. Top with a sprinkle of parmesan cheese.
    4. Serve and enjoy!
